This is an
incredibly rich and concentrated wine with lashings of briary, dark
berry fruits, aniseed, mocha and spicy complexity. The tannins are
amazingly soft and supply, with the Viognier contributing an almost
silky texture. Long, elegant and refined – an outstanding Shiraz. “This
wine has set the benchmark for the Hilltops region, striking the perfect
balance between warm climate richness and cool climate elegance. Cellar
10 years.
"It is an excellent wine. It’s fine and elegant and yet full of
ripeness, with flavours of cherry-plums, spearmint, fennel and chocolate
flecked with five-spice complexity. It tastes different. And silken. And
remarkably good. Apart from the texture, what I really like about
Moppity shiraz is the natural sense of complexity … it’s no mean thing.”

2007 RESERVE
CABERNET SAUVIGNON SANGIOVESE

This wine partners Cabernet Sauvignon with Sangiovese to
produce an Australian expression of Italy's classic "super
Tuscans" - a style that the Hilltops' climate is ideally
suited to. 2007's dry spring and summer resulted in a low
yield of just over 1tn/acre but the fruit was incredibly
concentrated.
The
powerful palate delivers a complex array of rich dark berry,
chocolate, savoury dried fruits and anise flavours
integrated with cedary oak and ripe supple tannins. Cellar
up to 12 years.
"It’s 90 percent cabernet sauvignon, grown
on 35 year old vines. The rest is sangiovese.
The oak is modest, and the tannin strong.
It’s wine that you really need to decant -
or better still, pop in the cellar for a
handful of years. It’s earthen and curranty,
cherried and sweet-sour, with long ropes of
assertive tannin. Lovely acidity too. And
lovely length. It’s far too young now, but
patience will be rewarded."
