About: We have 8 blocks planted to 5 clones of Shiraz, all with varying aspects, elevation and soil types. We believe a key element in ‘Moppity Shiraz’ comes from the art of blending small batches of different blocks and clones to produce wines that have a kaleidoscope of flavour and textural profiles.
Viticulture: 2016 was one of the warmest vintages that we’ve experienced in Hilltops. This produced fruit with incredible colour and intensity of flavour. The cool night time temperatures allowed the wines to maintain good acidity resulting in excellent structure and vibrancy.
Wine making: The fruit was cold soaked for 5 days before being inoculated in open fermenters. The wine was fermented gradually over 12 days then matured in French Puncheons and Hogsheads (25% new) for 12 months.
Tasting Notes: Intensely fragrant and sweetly scented. Asian spices and floral notes are underscored by bright, ripe berries on the nose. Consistently praised for it’s high quality and value, the 2016 delivers this well with supple tannins effortlessly surrounding intense red & black fruits and peppery spice. A really well balanced wine with a long, lingering finish.
