About: The cool climate, high elevation fruit was grown in Champagne-like viticulture conditions, but is modestly priced making it one of the most sought after vintage sparkling wines on the market.
Viticulture: 60% Pinot Noir, 35% Chardonnay 5% Pinot Meunier; The fruit was harvested in the cool of night at optimum ripeness to preserve its natural freshness.
Wine making: Only the free-run juice was used and was cold fermented to retain the aromatics and primary fruit flavours. The wine underwent a secondary fermentation to provide a fine bead and was on lees for 8 months.
Tasting Notes: A lovely fresh and toasty brioche nose with notes of strawberries and red fruits. The palate is fresh and bright with golden apple, spice and more summer berries. There is great structure and mouthfeel by combining a creamy texture with fine natural acid. The finish is long and lively. A lot more depth than is expected at this price point.
