About: Escalier (meaning staircase) represents our continuous quest for improvement; a gradual yet unrelenting ascent, culminating at the pinnacle with our flagship wine; Escalier. This is the first release of our flagship wine.
Viticulture: Single block; sourced entirely from block 12.Old vine,low yield, hand picked. There was good winter and spring rainfall, which stopped by mid-October; thereafter warm daytime temperatures, cool nights and dry conditions laid the base for an extremely good vintage.
Wine making: 35% Whole bunch, cold soaked for 3 days prior to fermentation. Temperature controlled ferment over 14 days, the Shiraz and Viognier were co-fermented. The wine was then barrel aged in new and used French puncheons and hogsheads for 14 months.
Tasting Notes: A nose of vibrant black fruit is really complex with evolving notes of brambly fruits, graphite, pepper & spice and black olives. The palate is deceptive; really silky and refined yet packed with flavour. A beautiful amalgamation of new and secondary notes. Layered with sweet dark fruits, bitter chocolate and spice box. This is super intense yet highly polished, finely focussed and exceptionally long. Low production, limitied availability
