“.. gorgeously expressed..”
Out of stock
We’ve made a lot of changes to our Cabernets since 2012, both in viticulture and winemaking, with a view to promoting vibrancy and freshness. We’re now seeing the results: Moppity Vineyards entered four teirs of our Cabernets into the Royal Hobart International Wine Show 2015, and we won the only four gold medals awarded out of the 46 wines entered. Such comprehensive success from a single winery is rare if not unprecedented in the Australian wine show circuit.

Technical & Tasting Notes
VITICULTURE
We make every effort in the vineyard to promote fruit quality. Minimal irrigation, bunch-thinning and careful pruning ensures low yields of highly concentrated fruit. Leaf thinned & shoot thinned. Yields are cropped at 2.5 tonnes per acre.
WINE MAKING
Cold soaked pre-ferment, 9 day fermentation, 14 day extended maceration post ferment, barrel aged in new and used French hogsheads and barriques with multiple rackings to clarify, aerate (enhancing the sensory properties of the wine) and to help form Pigmented Tannins which improve mouthfeel and stabilize colour.
TASTING NOTES
A perfectly ripe and balanced Cabernet. There’s a rich dark core of brambly fruit and nuances of aniseed and dark cocoa. A vibrant and elegant wine with fine supple tannins.
Reviews
Vintage 2017 (soon to be released)
“Blackcurrant, Mulberry, cedar, spice – quintessential Cabernet aromatics, pitch perfect one might suggest. Rich, a maelstrom of flavours, fruit and savoury ebbing and flowing; cassis, freshening and providing a surge of youthful energy – segueing to a fine tannin profile, adding structure to the primacy and vibrancy of fruit.” Stuart Robinson, Vinsomniac
“Intense dark purple in colour with aromas of mint, sweet cassis, cigar box and chocolate. While the palate is complex and layered with good tight tannins, balanced by luscious fruit and a long finish. True to its cabernet profile, a good example of a cool climate cabernet. Enjoy now or keep for five plus years.” – Stephen Read, Wine Matrix
“Attractively fruited and beautifully lifted, the bouquet shows cassis, dried herb, anise and cedar characters, followed by a beautifully weighted palate that is succulent and flavoursome. It is smooth and supple, yet properly structured by chalky tannins, finishing long and sturdy. At its best: now to 2027” – Sam Kim, Wine Orbit
Vintage 2016
“A gorgeously expressed cabernet, the inviting bouquet shows blackcurrant, plum, cigar, floral and cedar characters, followed by a beautifully rounded palate that is smooth and mouthfilling. The wine offers excellent fruit weight and intensity, while remaining elegant and refined, backed by polished tannins.” – Sam Kim, Wine Orbit
“Dense purple with intense aromas of blackcurrant cassis with cedar cigar box, mint and dark chocolate. The palate is complex and multilayered with cassis, mint, dark chocolate all evident. Tight tannins add to the overall mouthfeel along with clean crisp acid making the wine well balanced. Smooth and sensual this wine will benefit from 5+ years in the cellar. ” – Stephen Read, Wine Matrix
Vintage 2014
“Excellent, deep crimson purple colour; a very high quality second-tier wine typical of Moppity Vineyards and its exceptional vineyard in Hilltops, intense blackcurrant and black olive fruit is given additional context by its fine web of ripe, balanced tannins. Top fruit, top winemaking.” – James Halliday, Wine Companion
Vintage 2013
“Excellent crimson-purple; classic cassis varietal character is the driver, although tannins and oak lend carefully judged support. A really attractive wine.” – James Halliday, Wine Companion
