Technical & Tasting Notes
VITICULTURE
Shoot thinned & leaf thinned with nearly all the fruit coming from our low yielding (1.5 tonnes pa), old vine block.
WINE MAKING
Cold soaked pre-ferment, 12 day fermentation, barrel aged in new and used French hogsheads and barriques for 12 months. Multiple rackings to clarify, aerate (enhancing the sensory properties of the wine) and to help form pigmented tannins which improve mouthfeel and stabalize colour.
TASTING NOTES
A complex nose of pure cassis fruit, violets, crushed blackberries, dried herbs and cedary oak. Generous and stylish, the palate is bright & lifted with lovely complexity. A classy wine that finishes as elegantly as it begins with fine supple tannins.
